Stuff We Love: Sweet Goodness Pan Bar Mix from 1-2-3 Gluten Free

We really like delicious, and we really like easy, and of course we insist on allergy-free, so anytime something combines the three we're in paradise. This Sugar 'n Spice pan bar mix from 1-2-3 Gluten Free is one of the most delicious mixes we've tried. The texture is "normal"—fluffy, light, certainly not too dense in the way that allergy-free baked goods sometimes are. (This post isn't sponsored, we just tried this stuff and loved it.)



The box (and the website) includes a few recipes—they're probably quite good as-is!—but we modified it a bit. Here's what we did!



Prep Time: 10 minutes
Cook Time: 15–30 minutes
yields two 8" round pans or one 9x13

preheat your oven to 350˚F

Ingredients:

1 package 1-2-3 Gluten Free Sweet Goodness Pan Bar Mix
3 tbsp. chia seeds, ground, soaked in 9 tbsp. warm water for 5 minutes (or 3 large eggs)
3/4 cup canola oil
3/4 cup sugar-free apple sauce
1/4 tsp. cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. allspice
3/4 cup raisins

Top with our easy, soy-free and vegan cream cheese frosting

1. Combine Your Ingredients
With a mixer, combine your bar mix, chia seed mixture, canola oil and apple sauce. Mix in your cinnamon, nutmeg, cloves and allspice. Stir your raisins in by hand.

2. Bake
Grease two 8" pans, one 9x13 pan, or line 24 cupcake molds. Pour or scoop your batter and bake it in a 350˚F oven for 15 minutes (cupcakes), 20 minutes (8" pans), 30 minutes (9x13) or until a toothpick inserted into the center comes out clean.

3. Cool, Frost + Eat
Allow the cakes to rest for five minutes before trying to remove them from the pan. Once they cool completely, top them with our delicious soy-free and vegan cream cheese frosting. Sprinkle them with nutmeg.



We made these for a last-minute party and they were a huge hit—perfect for us because we needed something quick and easy, and perfect for our friends who are a mixed group of vegans, allergy-sufferers and conventional eaters. Everyone loved them; no one the wiser!
