Easy Chocolate Avocado Mousse: Gluten Free, Refined Sugar Free, Vegan

4:59 PM

I honestly can't imagine life without chocolate. Throughout all of the allergy craziness, throughout the various rounds of eliminations, my happy place has always been in the thought, at least I can still eat chocolate. And peanut butter. But mostly chocolate.

It's been on my mind this weekend because of a conversation I had with a colleague—her teenage sister was recently diagnosed with a slew of allergies/sensitivities and has eliminated a number of food groups from her diet, including gluten, dairy, and things that are too acidic—like chocolate. She sounds to be doing well, acknowledging that it's hard but that she feels so much better (which is exactly how I feel also!) but I can't help thinking, wow. No chocolate. Poor thing, I would never survive.

This girl also can't do refined sugar, causing me to mentally tick off our refined-sugar-free recipes. There are a number of things that we've tried but haven't perfected, but there are others that taste absolutely delicious sans any sort of unhealthy, refined white stuff. This is one of them! We adapted it from MindBodyGreen.

Prep Time: 2 minutes
yields 1–2 servings

1 large ripe avocado
1/4 cup cocoa powder
1/4 cup unsweetened coconut (or almond) milk
2 1/2 tsp. stevia
2 tsp. vanilla
1/4 tsp. cinnamon
pinch of salt

1. PureƩ Your Avocado
Using your Vitamix or food processor, pureƩ your avocado.

2. Make Chocolate Milk
In a separate bowl, whisk together your cocoa powder and your milk substitute.

3. Combine + Serve
Add your chocolate milk, stevia, vanilla, cinnamon and salt to your avocado. Mix well. You'll want to store this in the fridge.

This mousse is excellent with fresh fruit like strawberries and raspberries, as a topping on chia pudding (see our recipe for that here), and as a creamy faux frosting for cookies (like the gluten free lady fingers we're posting this week!). Let us know what you think.
