Buffalo Sauce: Dairy Free, Gluten Free, Egg Free

9:48 PM

Let's talk comfort food. It's freezing and snowing, we're stuck inside tonight watching the Grammy's, and we just feel like munching. After watching this episode of The Taste last week, I started having some mad cravings for buffalo chicken—it's probably my favorite food ever, if I had to pick a last meal it would be this.

The thing about buffalo sauce is that it's essentially hot sauce and butter. I learned that the hard way, of course—soon after my dairy allergy diagnosis I made the mistake of eating out without Tanya, ordered a buffalo chicken salad, and spent the next several days recovering. So yeah, buffalo sauce is a no-go.

Luckily it's easy to make allergy friendly. We like to make more than we need and keep it in the fridge so that we can add it to mashed potatoes, potato salad, and whatever else I happen to be craving at the moment.

Total Time: 5 minutes

2/3 cup hot sauce (such as Frank's Red Hot)
1/2 cup cold, unsalted butter (we used Earth Balance Soy Free)
1 1/2 tbsp. white vinegar
1/4 tsp. worcestershire sauce (not sure if it's gluten free? Read about that here.)
1/2 tsp. cayenne pepper
1/8 tsp. garlic powder
salt, to taste

1. Combine + Heat
Place all the ingredients in a sauce pan over medium heat. Whisk it and bring it to a simmer, then remove it from the heat once it begins to bubble. You're ready to use it! Wasn't that easy?

You can do a million things with this deliciousness, of course, but dipping chicken into it is my personal favorite. Follow our recipe for gluten-free fried chicken tenders here, then dunk the tenders in the buffalo sauce while they're still warm.
