Pumpkin Oatmeal Chocolate Chip Bars: Gluten Free, Soy Free, Vegan

So yeah, about that Ultimate Candida Diet thing. It was a really great thought (right?) but I've sort of, as they say, fallen off the bandwagon (like, on Day 2). Someday maybe I'll try it for real, but let's face it—detoxes are hard. Major props to those of you who have completed it. For now, I'm rocking a "minimal sugar" thing—making good choices and consuming as little sugar as possible on a day-to-day (sometimes moment-to-moment) basis. Since that means I'm allotted about a crumb of my favorite pumpkin chocolate chip bread every day, I definitely needed an alternative.

This is the perfect healthy, low-sugar Fall treat chocked full of oats (fiber!), pumpkin (vitamins!) and dark chocolate (antioxidants!). You can eat them for breakfast, guilt-free—or at least I do. We're adapting this recipe from Ambitious Kitchen, who says each bar only has 128 calories.



Ingredients:
make one 8x8 pan

3 cups gluten-free oats
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 1/4 tsp. cinnamon
1/8 tsp. nutmeg
pinch of ground cloves
1 cup canned pumpkin (not pumpkin pie mix!)
2 tsp. pure vanilla extract
1/2 cup unsweetened applesauce
1/2 cup brown sugar
1 tbsp. coconut oil, melted
1/3 cup dairy and soy free chocolate chips

preheat your oven to 350˚F

1. Make Your Oat Flour
In a blender or food processor, blend your oats for 1–2 minutes or until it resembles flour. Stir from the bottom to make sure all of the oats have been blended.

2. Mix Your Dry
Measure out 2 1/2 cups of your oat flour. (Note: 3 cups of oats makes about 2 1/2 cups of flour, but make sure to measure it—then you can save the leftover for future baking). Whisk in your baking powder, baking soda, salt, cinnamon, nutmeg and cloves.

3. Whisk Your Wet + Combine
In an electric mixer, whisk your pumpkin, brown sugar, vanilla extract, melted coconut oil and applesauce. Slowly add in your oat flour mixture. Fold in your chocolate chips.

4. Bake, Cool + Eat
Pour your batter into a greased pan. If you want to, sprinkle 2 tablespoons of chocolate chips on top and press them down a little. Bake them for 15–20 minutes. Once they're done, let them cool in the pan. These are good no matter what, but very best when warm!
