Chipotle Stovetop Popcorn: Dairy Free, Gluten Free, Vegan

Happy end-of-March. Do you know what happened yesterday? It snowed. Yeah. School closings and everything. The poor little daffodils were out there shivering under a little blanket of slush. It's not nice and it's not fair—I've already started my beach diet, can't go eating winter comfort foods anymore! But it's okay, we have a really great snack that's both figure-friendly and delicious. 

Microwave popcorn is fast and easy, but it's the fast food of popcorn. The real stuff, the stovetop stuff, is so much better—you know what's in it and you can make it taste just right. Plus it's so effortless to make! If you have kids, they're going to love this.



Cook Time: 2 minutes

Ingredients:

2 tbsp. canola oil (or other high temp. oil, like grapeseed)
1/4 cup popcorn kernels
2 tbsp. butter
1/4 tsp. chipotle powder
1/4 tsp. salt

Note: This is fairly spicy! If you want a more mild flavor, cut the chipotle back to 1/8 tsp.

1. Heat Your Oil
Put your oil in a medium-sized pot over medium-high heat. Immediately drop three popcorn kernels into the pot and cover it. Once all three kernels pop, you know your oil is hot enough. Use tongs to remove them from the oil so that they don't burn.



2. Pop Your Popcorn
Lift the pot off of the heat and pour in the remaining kernels. Cover and wait 30 seconds. Return the pot to medium-high heat. After a moment, the kernels will begin to pop! You'll know they're almost done when you can count several seconds between pops. At this time, remove them from the heat.



3. Season Your Popcorn
Pour the popcorn into a bowl. Drop the butter, salt and chipotle powder into your hot pot and allow it to melt. Pour it over your popcorn and toss it to coat. Eat!
