Sautéed Kale + Bacon + Apple: Dairy Free

Kale's one of those super-greens, you know? The kind you want to eat—the kind you want your kids to eat—if only it tasted really super good. Tanya's convinced me, rightfully so, that any vegetable can be the star of a meal if you know how to cook it correctly.

Sure, adding bacon decreases the nutritional value of the kale by a little tiny bit, but if you convince picky eaters to try it you can consider it a win. Right?

Prep Time: 5 minutes
Cook Time: 15-20 minutes


1 bunch of kale
1 piece thick-slab bacon, cut into small cubes
1/2 yellow onion, diced
1/2 green apple, diced
2 tbsp. apple cider vinegar
salt to taste

yields 3-4 servings, depending on the size of the kale bunch

1. Clean Your Kale
Remove the leaves from the stem, tearing it into smaller pieces as you go. Then wash it under cold water.

2. Cook Your Bacon
Drop your bacon cubes into a pan over medium heat and sauté until crispy. Remove bacon from drippings and set aside on paper towel.

3. Sauté Your Apple + Onions + Kale
Using the bacon drippings, sauté your apples and onion over medium heat. Once they become slightly translucent, begin adding your kale. Turn it gently so that it begins to wilt. After it has wilted, toss in your apple cider vinegar and let it cook down for 2–3 minutes.

4. Add Your Bacon
When the kale is done to your liking, toss in the bacon!

There you have it—an awesome, delicious, mostly-healthy side that your family will (hopefully) enjoy!
