Apple Cider Pancakes: Gluten Free + Vegan

Happy Sunday, friends! It's the last weekend of October—can you believe it?! Even though today was kinda nasty and cold, we visited our favorite pumpkin patch, took a hayride and drank hot apple cider.



Tanya volunteers as stage manager for a children's theater; last week, they put on a production of Bye Bye Birdie. Because her schedule the entire week beforehand was insanely busy, we missed two of our traditional Sunday breakfasts in a row. Today we made up for it, however, with some incredibly awesome pancakes. 




Prep Time: 30 minutes

Ingredients:
1 apple, peeled and diced
2 shakes of cinnamon
1 tbsp. brown sugar
1 tbsp. dairy-free butter

1/2 cup all-purpose gluten free flour
1/3 cup brown rice flour
1/3 cup sorghum flour
1/3 cup potato starch (or tapioca starch)
1/4 tsp. xanthan gum
1 tbsp. baking powder
1 tbsp. sugar
1 tsp. salt
1 1/2 cup coconut milk
1/2 tsp. vanilla
1 chia egg (1 tbsp. chia seeds + 3 tbsp. water, soaked for 3 minutes)
1 tsp. canola oil
2 tbsp. apple cider

1. Caramelize Your Apple
Heat a skillet over medium heat. Add butter and apples, and sauté until they start to brown. Add your cinnamon and brown sugar and continue to cook for a minute or two, as they start to caramelize.

2. Mix Your Dry Ingredients
In a medium mixing bowl, combine your three flours, starch, xanthan gum, baking powder, sugar, and salt. You should, in theory, sift all of these together buuut we didn't. I just rapidly whisk everything by hand to get out any major lumps.

3. Add Your Wet Ingredients
Mix in your milk, vanilla, oil and egg. Whisk it until just combined. Add apple cider, about two tablespoons, to thin out the batter a little.



4. Make Your Pancakes
Re-heat your skillet and grease it with butter. Drop spoonfuls of batter onto the skillet (we use a quarter-cup measure for this, and it works perfectly!) and plop a spoonful of apples onto each. Flip them after they begin to brown.



Enjoy these with your favorite toppings! We chose maple syrup from a local farmer's market and Tanya's homemade apple butter—absolutely delicious.
