Apple Crisp: Gluten Free + Dairy Free + Vegan

Goodness, has it really been a week already? Some are definitely crazier than others, but we made some really great cooler-weather meals last week that we're excited to catch you up on!

This weekend was lovely; we're unwinding from a fun day of family birthday celebrations with cups of hot apple cider tea. Yesterday, we attended the wedding of some good friend and Friday evening we had a bake-a-thon for today's party. I'd call that a successful weekend!

This coming weekend is the annual apple festival in Lebanon, Ohio! How have I never heard of this before?! We love the Troy Strawberry Festival every year; this sounds potentially better because it's Autumn + apples – two of my favorite things! We'll be sure to take lots of pictures, tell you all about it, and share a bunch of apple recipes.

In preparation, here's one we love: gluten free, dairy free apple crisp. It's fast, easy caramelized deliciousness.



Prep Time: 20 minutes
Cook Time: 45 minutes, or until the topping is golden and the filling is bubbling

Ingredients:
3 apples (we used honeycrisp, but granny smith would be great too!), peeled + cored + chopped
1 tsp maple syrup
1/3 cup packed light brown sugar
1/2 tbsp arrowroot powder
zest of one lemon, juice of one half lemon
1/2 tsp cinnamon
1/2 cup gluten free flour (we used Bob's Red Mill All Purpose Flour)
1/2 cup sugar
1/2 cup gluten free rolled oats
1/4 tsp baking soda
1/4 tsp salt
6 tbsp unsalted butter, diced at room temperature

Preheat your oven to 375˚F

1. Coat Your Apples
Toss chopped apples (we sliced each apple into circles, and then quartered each circle) with the maple syrup, brown sugar, arrowroot (to thicken), approximately half of the lemon zest (just guestimate!), lemon juice and cinnamon. Coat an 8x8 baking dish with nonstick oil and pour in your apples.



2. Make Your Crust
Stir together the flour, sugar, oats, baking soda, salt and remaining lemon zest. Add the butter; rub it into the mixture with your fingers. The mixture will be moist! Break it up with your fingers and sprinkle it over the apples.




3. Bake, Smell, Enjoy
Bake it for three quarters of an hour, or until the apple filling is bubbling and the topping is golden brown. Trust me, it'll be torture; your entire home will fill with the aroma of delicious, caramelizing, sweet apples. Serve it with some vanilla coconut ice cream, or even a little drizzle of coconut milk. Chef's tip: let it cool a little bit before you dig in. Yeah, we know, that's much easier said than done.
